Day 56 - Pickled Curried Cauliflower

In Mudgee we had pickled curried cauliflower on a salad.  It was so yummy.   So after finding a recipe and getting some last minute pep talk from a friend back in Canada (thanks Christine!!!) I attempted to can.  I will let you know how they taste after the 2 weeks is up. 

Brine Ingredients

  • 2 cups water
  • 1 cup vinegar
  • ⅓ cup sugar
  • 3 ½ tbsp kosher salt

Pickle Ingredients

  • 3 lbs cauliflower
  • 1 ¾ tsp kosher salt
  • 6 green cardamom pods
  • 3 bay leaves
  • 1 ½ tsp curry powder
  • ¾ tsp crushed red pepper (optional - adds spice)
  • ¾ tsp turmeric
